We enjoyed a full-on nigiri parade. We eased in with the quiet elegance of white fish—fluke, snapper—then built the tempo with hamachi and mackerel… then eventually moving on to the toro and king salmon. The finale? A high drama performance of uni, the creme brûlée of the ocean. Like foie gras had a fling with an oyster. Textural, rich, unreal. And here’s the kicker: In Japan, even the mid-tier sushi hits harder than the best stuff back home.
