Unlike Western-style courses, where dishes arrive sequentially, a samrub features multiple dishes presented at once, allowing diners to enjoy a variety of flavors, textures, and aromas in a single meal. It’s all about the balanced flavors and diverse textures. Thai cuisine emphasizes the harmony of sweet, sour, salty, spicy, and bitter tastes. A samrub typically includes dishes that are crispy, creamy, chewy, and tender—all intended to create a well-rounded experience. Chef Prin Polsuk is celebrated for his dedication to preserving and elevating traditional Thai cuisine. He became a protege of Chef David Thompson. Together, they worked at Nahm in London, which became the first Thai restaurant to receive a Michelin star in 2002. Following the closure of Nahm London in 2010, Chef Prin returned to Bangkok to helm Nahm Bangkok as head chef until 2018. In 2019, Chef Prin, alongside his wife Thanyaporn “Mint” Jarukittikun, co-founded Samrub Samrub Thai in Bangkok, where they focus on reviving ancient Thai recipes and offers a chef’s table experience that emphasizes the traditional Thai “samrub.” The restaurant’s commitment to authentic Thai flavors and culinary traditions earned it a Michelin star in 2023.
